Sweet and Sour Tofu
diet with acupuncture, sweet and sour tofu ingredients

This meal is delicious and is very easy to make. It only takes ten to fifteen minutes to prepare. Many different vegetables can be used. The vegetables should be cut finely so they cook quickly.

1 medium onion
1 inch piece of ginger
2-3 carrots
2-3 sticks of celery
1 red or green pepper
1 cup of finely cut red or green cabbage
1 tub of fresh firm tofu

The Sauce
3 tablespoons apple cider vinegar or rice vinegar
3 tablespoons tamari
3 tablespoons brown sugar, maple syrup or honey
1 or 2 teaspoons corn starch or kuzu

1. Chop the onion finely. Peel the ginger and chop into fine matchstick size pieces half an inch long. Cut the carrot into matchstick slices about an inch long. Finely cut the celery into slices an eighth of an inch thick. Cut the pepper into small pieces and finely cut the cabbage.

2. Measure out all the ingredients for the sauce in a jug or bowl and add half a cup of water. Stir together and put to one side.

3. Heat 2-3 tablespoons of oil in a large frying pan. Add the onions and cook fairly quickly until they start to turn golden brown. Add the ginger and cook for a minute. Add the carrots and celery and cook for a couple of minutes. Next, add the pepper and cabbage, and finally the tofu. Keep stirring while the dish cooks.

4. Stir before adding to the vegetables. Stir the vegetables while the sauce thickens.

5. Serve with rice.
